An easy, healthy, delicious recipe from my favorite TV cook, Giada di Laurentis.
Start some whole wheat pasta boiling. Meanwhile, zest a lemon and reserve about two tablespoons of lemon juice. Mince some garlic (1 clove) and chop about 2-3 tablespoons of capers, as well as a handfull of fresh basil. Season your salmon filets with salt and pepper, then pan-sear until medium rare. When pasta has finished cooking, toss with garlic and extra virgin olive oil, then add zest, lemon juice and basil. Arrange over baby spinach, then top with salmon and serve immediately.
This only took about 20 minutes to prepare. It was filling and best of all, full of protein and omega-3s.
For the non-believer - I always keep capers stocked in the fridge (they keep pretty well for extended periods). On the day of, I bought the salmon and basil - you can use the basil for lots of other things like pesto or to season salads. Lemon keeps for about a week, longer if you keep them refrigerated. Pasta and garlic are ingredients I always have on hand. This is a really simple, quick dinner to make.
