We need better lighting in the kitchen
Alexis: Been trying out a lot of new recipes lately. Tonight we had a refreshing cucumber, cantaloupe and yellow squash salad with yogurt-lime-cumin dressing and pan-seared salmon seasoned with salt, pepper, chili and cinnamon. The salad was really good - I have enough to make another batch for this weekend. The thing that sucks about it is it's so simple, but the prep work is a little tedious. Especially without a peeler or mandolin. The cucumber and squash marinated in a little salt and rice wine vinegar before tossing it with the cantaloupe - great contrast in flavors. The salmon was so-so. I think just olive oil and pepper would've been good.
Tomorrow, packing a picnic for Summerstage - baked spice chicken (made a rub/marinade of dijon mustard, brown sugar and paprika) and a fruit salad.
